This recipe is easy, filling and can be served as breakfast or a snack. It has all the good fats from the avocado, protein from eggs and goodness from the seeds. The feta cheese is optional and as I found out later it is amazing even without it. Plus without the cheese you can tick the Paleo box.
Method, or the way I cooked it:
- Mash the avocado with the fork, add a bit of olive oil, salt and balsamic vinegar.
- Prepare the poached eggs – I found amazing recipe by Heston, that is not hard to follow and the eggs are just hmmm…. Recipe soon on my blog.
- Put the poached eggs on the avocado sprinkle with seeds (pumpkin and sunflower). Or any other you like or have at home. Finnish with a bit of olive oil, salt and pepper.
