Czech version

This recipe is easy, filling and can be served as breakfast or a snack. It has all the good fats from the avocado, protein from eggs and goodness from the seeds. The feta cheese is optional and as I found out later it is amazing even without it. Plus without the cheese you can tick the Paleo box.

Method, or the way I cooked it:

  1. Mash the avocado with the fork, add a bit of olive oil, salt and balsamic vinegar.
  2. Prepare the poached eggs – I found amazing recipe by Heston, that is not hard to follow and the eggs are just hmmm….  Recipe soon on my blog.
  3. Put the poached eggs on the avocado sprinkle with seeds (pumpkin and sunflower). Or any other you like or have at home. Finnish with a bit of olive oil, salt and pepper.
